  • 1/3 cup unsalted butter, melted and slightly cooled
  • 3/4 cup granulated sugar or light brown sugar
  • 1 large egg, room temperature

  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon fine salt
  • 1 1/4 cups all-purpose flour
  • 1/2 cup chopped walnuts or pecans
  • 1/3 cup chocolate chips or raisins

Instructions:

  1. Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. Mash bananas in a medium bowl with a fork until mostly smooth with small lumps.
  3. Stir melted butter into the mashed bananas. Add sugar, beaten egg, and vanilla extract; mix until combined.
  4. Whisk together flour, baking soda, salt, and cinnamon in a separate bowl.
  5. Gradually fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
  6. Fold in optional add-ins like walnuts, chocolate chips, or raisins if desired.
  7. Pour the batter into the prepared pan and smooth the top; bake for 50-60 minutes or until a toothpick inserted comes out clean.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.
