Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup whole milk
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 cup all-purpose flour (for crumble topping)
- 1/3 cup brown sugar, packed
- 1 teaspoon ground cinnamon
- 1/4 cup unsalted butter, cold and cubed
Instructions:
- Preheat the oven to 350°F (175°C) and line the muffin tin with liners.
- In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, and salt.
- In another bowl, combine the milk, melted butter, eggs, and vanilla. Mix well.
- Pour the wet mixture into the dry ingredients. Stir gently until just combined (don’t overmix!).
- Using a pastry cutter or fork, combine the crumble topping ingredients until a crumbly texture forms.
- Spoon batter evenly into muffin liners, filling each about 2/3 full.
- Sprinkle the crumble topping generously over each muffin.
- Bake for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
- Allow to cool in the tin for 5 minutes, then transfer muffins to a wire rack.
