Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup whole milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup all-purpose flour (for crumble topping)
  • 1/3 cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, cold and cubed

Instructions:

  1. Preheat the oven to 350°F (175°C) and line the muffin tin with liners.
  2. In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, and salt.
  3. In another bowl, combine the milk, melted butter, eggs, and vanilla. Mix well.
  4. Pour the wet mixture into the dry ingredients. Stir gently until just combined (don’t overmix!).
  5. Using a pastry cutter or fork, combine the crumble topping ingredients until a crumbly texture forms.
  6. Spoon batter evenly into muffin liners, filling each about 2/3 full.
  7. Sprinkle the crumble topping generously over each muffin.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
  9. Allow to cool in the tin for 5 minutes, then transfer muffins to a wire rack.
