Ingredients:

  • 1 (14-ounce/397g) package Royal Icing Mix (like Wilton)
  • 5-7 tablespoons (75-105ml) lukewarm water
  • Gel food coloring (optional, for desired colors)

Instructions:

  1. In a mixing bowl, combine the royal icing mix with 5 tablespoons of lukewarm water.
  2. Beat with an electric mixer on low speed until ingredients are combined. Gradually increase the speed to medium-high, then beat for 5-7 minutes, or until the icing forms stiff, glossy peaks. Add more water, 1 tablespoon at a time, if needed to achieve desired consistency.
  3. If using multiple colors, divide the icing into separate bowls. Add a tiny amount of gel food coloring to each bowl and mix well until desired color is achieved.
  4. Fit piping bags with desired tips and couplers (if using). Fill the bags with icing, being careful not to overfill.
  5. Pipe the royal icing onto your cookies, cakes, or gingerbread creations.
  6. Allow the icing to dry completely at room temperature. Drying time will vary depending on the thickness of the icing and the humidity, but expect at least 2 hours, preferably overnight.
