Ingredients:
- 1 ½ cups (190g) all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 3 ripe bananas, mashed (about 1 ½ cups / 360g)
- ¾ cup (150g) granulated sugar
- 1 large egg, at room temperature
- ⅓ cup (80ml) unsalted butter, melted and cooled slightly
- 1 teaspoon vanilla extract
- Optional: ½ cup (60g) chopped walnuts or chocolate chips
Instructions:
- Preheat oven to 350°F (175°C). Line muffin tin with paper liners or grease well.
- Whisk together flour, baking powder, baking soda, and salt in a medium bowl.
- In a large bowl, mash the ripe bananas until mostly smooth. Add sugar, egg, melted butter, and vanilla extract; whisk until combined.
- Gently fold the dry ingredients into the wet mixture until just combined. Do not overmix; the batter should be slightly lumpy. Fold in any optional additions like walnuts or chocolate chips.
- Divide batter evenly into the 12 muffin cups (about ¾ full). Bake 18-22 minutes or until a toothpick inserted in the centre comes out clean or with just a few moist crumbs.
- Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
