Ingredients:

  • 1 large fresh pineapple, peeled, cored, and cut into 1-inch cubes
  • 2 large English cucumbers, halved lengthwise and sliced into half-moons
  • 1/2 red onion, paper-thinly sliced
  • 3 tbsp fresh lime juice
  • 1 tsp lime zest
  • 1 tbsp honey
  • 1 tsp red chili flakes
  • 1/2 tsp sea salt
  • 1/2 cup fresh cilantro, roughly chopped
  • 1 tbsp neutral oil

Instructions:

  1. Place sliced English cucumbers in a colander over a bowl. Sprinkle with a pinch of salt and let sit for 10 minutes to draw out excess moisture. Pat dry with a clean towel.
  2. In a small bowl, whisk together the lime juice, lime zest, honey, red chili flakes, and salt until the honey is fully dissolved. Whisk in the neutral oil if using.
  3. In a large mixing bowl, combine the pineapple cubes, prepared cucumbers, and sliced red onion. Pour the dressing over the ingredients and toss gently.
  4. Stir in the fresh cilantro. Refrigerate for 20 minutes before serving to allow the flavors to macerate.
