Ingredients:
- 1 large fresh pineapple, peeled, cored, and cut into 1-inch cubes
- 2 large English cucumbers, halved lengthwise and sliced into half-moons
- 1/2 red onion, paper-thinly sliced
- 3 tbsp fresh lime juice
- 1 tsp lime zest
- 1 tbsp honey
- 1 tsp red chili flakes
- 1/2 tsp sea salt
- 1/2 cup fresh cilantro, roughly chopped
- 1 tbsp neutral oil
Instructions:
- Place sliced English cucumbers in a colander over a bowl. Sprinkle with a pinch of salt and let sit for 10 minutes to draw out excess moisture. Pat dry with a clean towel.
- In a small bowl, whisk together the lime juice, lime zest, honey, red chili flakes, and salt until the honey is fully dissolved. Whisk in the neutral oil if using.
- In a large mixing bowl, combine the pineapple cubes, prepared cucumbers, and sliced red onion. Pour the dressing over the ingredients and toss gently.
- Stir in the fresh cilantro. Refrigerate for 20 minutes before serving to allow the flavors to macerate.
