Ingredients:

  • 1 large tortilla wrap (approx. 10-12 inches)
  • 2 tablespoons pizza sauce (homemade or store-bought)
  • ½ cup shredded mozzarella cheese (approx. 60g)
  • ¼ cup pepperoni slices (approx. 30g)
  • ¼ cup sliced mushrooms (approx. 25g)
  • 1 tablespoon grated Parmesan cheese (approx. 5g)
  • 1 teaspoon olive oil (approx. 5ml)

Instructions:

  1. Lay the tortilla flat on a clean surface. Using a sharp knife cut a single line from the center of the tortilla to the edge.
  2. Divide the tortilla into 4 quadrants, Spread the pizza sauce on the first quadrant.
  3. Sprinkle the mozzarella cheese over the sauced quadrant.
  4. Arrange the pepperoni slices and sliced mushrooms on the third quadrant. Sprinkle the Parmesan cheese over the fourth quadrant.
  5. Starting with the sauce quadrant, carefully fold the wrap over onto the cheese, then onto the toppings, and finally over onto the parmesan. This will create a layered triangle.
  6. Heat the olive oil in the frying pan or on the griddle over medium heat.
  7. Place the folded wrap in the hot pan and cook for 2-3 minutes per side, or until golden brown and the cheese is melted and gooey. Press down gently with a spatula to ensure even browning.
  8. Remove the Pizza Wrap from the pan, let it cool slightly, and cut in half (optional). Serve immediately.
