Ingredients:

  • 2 bags or 2 tsp high-quality Earl Grey Tea
  • 4 fl oz Boiling Water (120 ml)
  • 1-2 tablespoons Vanilla Simple Syrup (15 – 30 ml)
  • 8 fl oz Whole Milk (240 ml)
  • Pinch of dried culinary lavender (optional garnish)
  • For Simple Syrup: 1/2 cup Granulated Sugar
  • For Simple Syrup: 1/2 cup Filtered Water
  • For Simple Syrup: 1 teaspoon Pure Vanilla Extract

Instructions:

  1. Prepare the Vanilla Syrup (if making homemade): In a small saucepan, combine the sugar and water. Heat gently, stirring constantly until the sugar is fully dissolved. Remove from heat, cool slightly (5 minutes), and stir in the 1 teaspoon of pure vanilla extract. Set aside (or use pre-made syrup).
  2. Brew the Strong Tea Base: Bring 4 fl oz (120 ml) of water to a rolling boil. Place the two tea bags or 2 tsp loose leaf Earl Grey into your mug. Pour the boiling water over the tea.
  3. Steep Intensely: Allow the tea to steep for a minimum of 5 minutes. This creates the necessary concentrated flavour. Once steeped, remove and discard the tea bags/leaves.
  4. Sweeten: Add 1 to 2 tablespoons of the vanilla syrup (adjust to preferred sweetness) into the steeped tea base. Stir briefly.
  5. Steam the Milk: Pour 8 fl oz (240 ml) of cold whole milk into your frothing container. Heat and froth the milk using your preferred method until it reaches 145°F – 155°F (63°C – 68°C) with a velvety microfoam texture.
  6. Assemble and Finish: Gently pour the steamed liquid milk into the tea and syrup mixture in the mug. Spoon the velvety foam over the top of the latte. Optionally, sprinkle lightly with dried culinary lavender buds before serving immediately.
