Ingredients:
- 1.5 lbs Yukon Gold potatoes, peeled and diced into ½-inch cubes
- 1 tsp salt
- ¼ cup water
- ½ cup mayonnaise
- 1 tbsp yellow mustard
- 1 tbsp apple cider vinegar
- ½ tsp granulated sugar
- ¼ tsp black pepper
- 2 stalks celery, finely diced
- 3 tbsp red onion, minced
- 1 tbsp fresh parsley, chopped
- ½ tsp smoked paprika
Instructions:
- Place the diced potatoes in a microwave-safe bowl with water and salt. Cover with a lid or microwave-safe plate and heat on high for 8–10 minutes, or until the cubes are easily pierced with a fork. Drain immediately and let them steam-dry for 2 minutes.
- While the potatoes are steaming, combine the mayonnaise, mustard, apple cider vinegar, sugar, and pepper in a medium bowl. Stir until the mixture is smooth and velvety.
- Add the warm potatoes, diced celery, and red onion to the dressing. Gently fold the ingredients together using a spatula to avoid smashing the potato cubes. Stir in the fresh parsley and finish with a dusting of smoked paprika on top.
