Ingredients:

  • 2 cups rolled oats (180 g)
  • 1 cup creamy peanut butter (250 g)
  • ½ cup honey or maple syrup (170 g)
  • ½ cup milk (dairy or non-dairy) (120 ml)
  • 1 tsp vanilla extract (5 ml)
  • ¼ cup chocolate chips or raisins (optional) (40 g)
  • 1-2 tbsp crushed nuts (optional) (15-30 g)

Instructions:

  1. In a mixing bowl, add rolled oats and optional toppings.
  2. In a separate bowl, stir together peanut butter, honey or maple syrup, milk, and vanilla extract until smooth.
  3. Pour the wet ingredient mixture over the oats and mix until evenly combined.
  4. Use a spoon to scoop out portions of the mixture and shape into cookie-sized rounds.
  5. Place cookies on a lined baking sheet and refrigerate for at least 30 minutes to firm up.
  6. Once chilled, enjoy your no-cook oatmeal cookies as a snack or dessert!
