Ingredients:
- 2 cups rolled oats (180 g)
- 1 cup creamy peanut butter (250 g)
- ½ cup honey or maple syrup (170 g)
- ½ cup milk (dairy or non-dairy) (120 ml)
- 1 tsp vanilla extract (5 ml)
- ¼ cup chocolate chips or raisins (optional) (40 g)
- 1-2 tbsp crushed nuts (optional) (15-30 g)
Instructions:
- In a mixing bowl, add rolled oats and optional toppings.
- In a separate bowl, stir together peanut butter, honey or maple syrup, milk, and vanilla extract until smooth.
- Pour the wet ingredient mixture over the oats and mix until evenly combined.
- Use a spoon to scoop out portions of the mixture and shape into cookie-sized rounds.
- Place cookies on a lined baking sheet and refrigerate for at least 30 minutes to firm up.
- Once chilled, enjoy your no-cook oatmeal cookies as a snack or dessert!
