Ingredients:

  • 2 (4-6 oz) salmon fillets
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp lemon juice
  • 1 ripe avocado, diced
  • 1/4 cup crumbled feta cheese
  • 2 tbsp red onion, diced
  • 1 tbsp fresh cilantro, chopped
  • 1 tbsp lemon juice
  • Pinch of red pepper flakes (optional)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper (if using). Place the salmon fillets on the baking sheet.
  3. Drizzle the salmon with olive oil, then sprinkle with garlic powder, paprika, salt, and pepper. Squeeze lemon juice over the fillets.
  4. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  5. While the salmon is baking, in a small bowl, gently mash the diced avocado with a fork, leaving some chunks.
  6. Add the feta cheese, red onion, cilantro, lemon juice, and red pepper flakes (if using) to the avocado. Gently stir to combine.
  7. Once the salmon is cooked, top each fillet with the creamy avocado and feta mixture. Serve immediately.
