Ingredients:
- 2 (4-6 oz) salmon fillets
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/4 tsp paprika
- Salt and pepper to taste
- 1 tbsp lemon juice
- 1 ripe avocado, diced
- 1/4 cup crumbled feta cheese
- 2 tbsp red onion, diced
- 1 tbsp fresh cilantro, chopped
- 1 tbsp lemon juice
- Pinch of red pepper flakes (optional)
Instructions:
- Preheat oven to 400°F (200°C).
- Line a baking sheet with parchment paper (if using). Place the salmon fillets on the baking sheet.
- Drizzle the salmon with olive oil, then sprinkle with garlic powder, paprika, salt, and pepper. Squeeze lemon juice over the fillets.
- Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- While the salmon is baking, in a small bowl, gently mash the diced avocado with a fork, leaving some chunks.
- Add the feta cheese, red onion, cilantro, lemon juice, and red pepper flakes (if using) to the avocado. Gently stir to combine.
- Once the salmon is cooked, top each fillet with the creamy avocado and feta mixture. Serve immediately.
