Ingredients:
- 1 pound (450g) fresh Lion
- s Mane mushrooms, cleaned and sliced
- 2 tablespoons (30ml) olive oil
- 3 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
- ½ teaspoon salt (2g)
- ¼ teaspoon black pepper (1g)
- 1 tablespoon (15ml) lemon juice
- Fresh parsley, chopped (optional)
- Zest of 1 lemon (optional)
Instructions:
- Clean the mushrooms using a damp cloth or a soft brush to remove any dirt. Trim the ends and slice them into ½ inch (1.25 cm) thick pieces.
- Place a large skillet over medium-high heat. Add olive oil; heat until shimmering.
- Add the sliced mushrooms to the skillet in a single layer. Let them cook undisturbed for about 2-3 minutes until golden on one side.
- Stir the mushrooms and add the minced garlic, thyme, salt, and pepper. Sauté for an additional 2-3 minutes, cooking until mushrooms are tender.
- Remove from heat and drizzle with lemon juice. Toss gently to combine.
- Garnish with fresh parsley and lemon zest if desired.
