Ingredients:

  • 1 pound (450g) fresh Lion
  • s Mane mushrooms, cleaned and sliced
  • 2 tablespoons (30ml) olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • ½ teaspoon salt (2g)
  • ¼ teaspoon black pepper (1g)
  • 1 tablespoon (15ml) lemon juice
  • Fresh parsley, chopped (optional)
  • Zest of 1 lemon (optional)

Instructions:

  1. Clean the mushrooms using a damp cloth or a soft brush to remove any dirt. Trim the ends and slice them into ½ inch (1.25 cm) thick pieces.
  2. Place a large skillet over medium-high heat. Add olive oil; heat until shimmering.
  3. Add the sliced mushrooms to the skillet in a single layer. Let them cook undisturbed for about 2-3 minutes until golden on one side.
  4. Stir the mushrooms and add the minced garlic, thyme, salt, and pepper. Sauté for an additional 2-3 minutes, cooking until mushrooms are tender.
  5. Remove from heat and drizzle with lemon juice. Toss gently to combine.
  6. Garnish with fresh parsley and lemon zest if desired.
