- 2 tablespoons (30 ml) mayonnaise
- 1 tablespoon (15 ml) Dijon mustard
- 1 small onion, finely chopped
- 1 small red bell pepper, finely chopped
- 1-2 fresh Scotch bonnet peppers, finely chopped (adjust to taste)
- 1 tablespoon (15 g) fresh ginger, grated
- 2 tablespoons (30 ml) fresh lime juice
- Fresh cilantro, chopped (optional)
- Lime wedges (for serving)
Instructions:
- Flake the smoked mackerel fillets into a mixing bowl using a fork.
- Add the mayonnaise and Dijon mustard to the fish. Mix until well combined.
- Stir in the finely chopped onion, red bell pepper, Scotch bonnet peppers, and grated ginger.
- Pour in the fresh lime juice and mix thoroughly until all ingredients are evenly distributed.
- Cover the mixture and refrigerate for at least 30 minutes to allow the flavors to meld.
- Garnish with fresh chopped cilantro (if using) and serve with lime wedges on the side.
