  • 1-2 fresh Scotch bonnet peppers, finely chopped (adjust to taste)
  • 1 tablespoon (15 g) fresh ginger, grated
  • 2 tablespoons (30 ml) fresh lime juice
  • Fresh cilantro, chopped (optional)
  • Lime wedges (for serving)

Instructions:

  1. Flake the smoked mackerel fillets into a mixing bowl using a fork.
  2. Add the mayonnaise and Dijon mustard to the fish. Mix until well combined.
  3. Stir in the finely chopped onion, red bell pepper, Scotch bonnet peppers, and grated ginger.
  4. Pour in the fresh lime juice and mix thoroughly until all ingredients are evenly distributed.
  5. Cover the mixture and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Garnish with fresh chopped cilantro (if using) and serve with lime wedges on the side.
