Ingredients:
- 1 lb ground beef or turkey
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 (15 oz) can black beans, rinsed and drained
- 1 (15 oz) can kidney beans, rinsed and drained
- 1 (15 oz) can corn, drained
- 1 (28 oz) can diced tomatoes with green chilies
- ... cups beef or chicken broth (low sodium)
- (Optional) Shredded cheddar cheese to taste.
- (Optional) Sour cream to taste.
- (Optional) Sliced jalapeños.
- (Optional) Fresh cilantro, chopped.
- ... Fritos corn chips for topping
Instructions:
- Step 1: In a large pot or Dutch oven over medium heat, add the ground beef or turkey. Cook until browned and no longer pink. Use a wooden spoon to break it up as it cooks.
- Step 2: Once the meat is cooked through, drain any excess fat. Add the diced onion and minced garlic to the pot. Sauté for about 3–4 minutes, until the onions are translucent.
- Step 3: Stir in the taco seasoning mix. Cook for another 2 minutes, allowing the spices to toast slightly.
- Step4: Pour in the diced tomatoes with their juice, black beans, kidney beans, corn,and broth.Stir well to combine all ingredients.
- Step5: Bring the mixture to a boil over high heat.Once boiling,reduced heat to low and let simmer uncovered for about 20–25 minutes, stirring occasionally.
- Step6: Taste your soup before serving; adjust salt and pepper as needed.
- Step7: Serve hot in bowls topped generously with Fritos corn chips along with optional toppings like shredded cheese,sour cream,sliced jalapeños or fresh cilantro as desired!
