Ingredients:

  • 1 lb ground beef or turkey
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) can kidney beans, rinsed and drained
  • 1 (15 oz) can corn, drained
  • 1 (28 oz) can diced tomatoes with green chilies
  • ... cups beef or chicken broth (low sodium)
  • (Optional) Shredded cheddar cheese to taste.
  • (Optional) Sour cream to taste.
  • (Optional) Sliced jalapeños.
  • (Optional) Fresh cilantro, chopped.
  • ... Fritos corn chips for topping

Instructions:

  1. Step 1: In a large pot or Dutch oven over medium heat, add the ground beef or turkey. Cook until browned and no longer pink. Use a wooden spoon to break it up as it cooks.
  2. Step 2: Once the meat is cooked through, drain any excess fat. Add the diced onion and minced garlic to the pot. Sauté for about 3–4 minutes, until the onions are translucent.
  3. Step 3: Stir in the taco seasoning mix. Cook for another 2 minutes, allowing the spices to toast slightly.
  4. Step4: Pour in the diced tomatoes with their juice, black beans, kidney beans, corn,and broth.Stir well to combine all ingredients.
  5. Step5: Bring the mixture to a boil over high heat.Once boiling,reduced heat to low and let simmer uncovered for about 20–25 minutes, stirring occasionally.
  6. Step6: Taste your soup before serving; adjust salt and pepper as needed.
  7. Step7: Serve hot in bowls topped generously with Fritos corn chips along with optional toppings like shredded cheese,sour cream,sliced jalapeños or fresh cilantro as desired!
