Ingredients:

  • 3 cups (720 ml) water
  • 1 cup (240 ml) milk (dairy or non-dairy), plus more for serving
  • 1 cup (90g) rolled oats (not instant or steel-cut)
  • ½ cup (128g) creamy peanut butter
  • ¼ cup (50g) packed light brown sugar (or maple syrup)
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • Optional Toppings: Sliced bananas, chopped peanuts, chocolate chips, a drizzle of honey

Instructions:

  1. In the slow cooker, combine water, milk, rolled oats, peanut butter, brown sugar (or maple syrup), vanilla extract, cinnamon, and salt.
  2. Stir until the peanut butter is mostly dissolved and the ingredients are well combined.
  3. Cover and cook on low for 4-6 hours or on high for 2-3 hours, or until the oatmeal is cooked through and creamy. Stir occasionally during the last hour to prevent sticking.
  4. Ladle into bowls. Add additional milk to desired consistency.
  5. Garnish with your favorite toppings like sliced bananas, chopped peanuts, or chocolate chips.
