Ingredients:
- 3 cups (720 ml) water
- 1 cup (240 ml) milk (dairy or non-dairy), plus more for serving
- 1 cup (90g) rolled oats (not instant or steel-cut)
- ½ cup (128g) creamy peanut butter
- ¼ cup (50g) packed light brown sugar (or maple syrup)
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- Optional Toppings: Sliced bananas, chopped peanuts, chocolate chips, a drizzle of honey
Instructions:
- In the slow cooker, combine water, milk, rolled oats, peanut butter, brown sugar (or maple syrup), vanilla extract, cinnamon, and salt.
- Stir until the peanut butter is mostly dissolved and the ingredients are well combined.
- Cover and cook on low for 4-6 hours or on high for 2-3 hours, or until the oatmeal is cooked through and creamy. Stir occasionally during the last hour to prevent sticking.
- Ladle into bowls. Add additional milk to desired consistency.
- Garnish with your favorite toppings like sliced bananas, chopped peanuts, or chocolate chips.
