Ingredients:

  • 1 cup raw almonds
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • ¼ teaspoon red pepper flakes (optional for heat)
  • 1 tablespoon chopped green onions (for garnish)
  • 1 teaspoon toasted sesame seeds (optional for topping)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Spread raw almonds evenly on a baking sheet lined with parchment paper.
  3. In a mixing bowl, combine soy sauce, brown sugar, sesame oil, grated ginger, minced garlic, and red pepper flakes. Whisk until the sugar is dissolved.
  4. Pour the sauce over the almonds. Stir well to ensure almonds are evenly coated.
  5. Place the baking sheet in the preheated oven. Roast for 15-20 minutes, stirring halfway, until almonds are fragrant and lightly golden brown.
  6. Remove from oven; allow to cool slightly. Garnish with chopped green onions and sesame seeds if desired.
