Ingredients:

  • 1 pound (450g) Italian sausage (sweet or hot, your choice)
  • 1 medium red onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium zucchini, sliced
  • 2 tablespoons (30ml) olive oil
  • 1 teaspoon (5g) dried oregano
  • 1 teaspoon (5g) garlic powder
  • Salt and pepper to taste
  • Fresh parsley, chopped, for serving (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Slice the onion, bell peppers, and zucchini. In a large mixing bowl, combine vegetables with olive oil, oregano, garlic powder, salt, and pepper.
  3. Spread the seasoned vegetables on a baking sheet. Nestle the Italian sausages among the vegetables.
  4. Roast for 30-35 minutes until sausages are browned and cooked through (internal temperature should reach 160°F / 71°C) and vegetables are tender.
  5. Remove from oven, garnish with fresh parsley, and serve hot.
