Ingredients:
- 1 pound (450g) Italian sausage (sweet or hot, your choice)
- 1 medium red onion, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium zucchini, sliced
- 2 tablespoons (30ml) olive oil
- 1 teaspoon (5g) dried oregano
- 1 teaspoon (5g) garlic powder
- Salt and pepper to taste
- Fresh parsley, chopped, for serving (optional)
Instructions:
- Preheat the oven to 400°F (200°C).
- Slice the onion, bell peppers, and zucchini. In a large mixing bowl, combine vegetables with olive oil, oregano, garlic powder, salt, and pepper.
- Spread the seasoned vegetables on a baking sheet. Nestle the Italian sausages among the vegetables.
- Roast for 30-35 minutes until sausages are browned and cooked through (internal temperature should reach 160°F / 71°C) and vegetables are tender.
- Remove from oven, garnish with fresh parsley, and serve hot.
