Ingredients:

  • 2 medium zucchinis, sliced into half-moons
  • 1 large cauliflower, cut into small florets
  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon crushed red pepper flakes (optional)
  • Salt to taste
  • Black pepper to taste
  • Juice of 1 lemon
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Wash and slice zucchini into half-moons.
  3. Cut cauliflower into small florets.
  4. Combine the vegetables in a large mixing bowl.
  5. In a separate bowl, whisk together olive oil, smoked paprika, garlic powder, crushed red pepper flakes, salt, pepper, and lemon juice.
  6. Toss the vegetables with the seasoning until evenly coated.
  7. Spread the seasoned vegetables in a single layer on a baking sheet.
  8. Roast in the preheated oven for 20-25 minutes until tender and golden brown, stirring halfway through for even cooking.
  9. Remove from the oven and garnish with chopped parsley, if desired.
  10. Serve immediately.
