Ingredients:
- 2 medium zucchinis, sliced into half-moons
- 1 large cauliflower, cut into small florets
- 3 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- ½ teaspoon crushed red pepper flakes (optional)
- Salt to taste
- Black pepper to taste
- Juice of 1 lemon
- 2 tablespoons fresh parsley, chopped (optional)
Instructions:
- Preheat the oven to 425°F (220°C).
- Wash and slice zucchini into half-moons.
- Cut cauliflower into small florets.
- Combine the vegetables in a large mixing bowl.
- In a separate bowl, whisk together olive oil, smoked paprika, garlic powder, crushed red pepper flakes, salt, pepper, and lemon juice.
- Toss the vegetables with the seasoning until evenly coated.
- Spread the seasoned vegetables in a single layer on a baking sheet.
- Roast in the preheated oven for 20-25 minutes until tender and golden brown, stirring halfway through for even cooking.
- Remove from the oven and garnish with chopped parsley, if desired.
- Serve immediately.
