Ingredients:
- 1 whole head (approx. 50g) of garlic
- 1 tbsp (15ml) extra virgin olive oil
- ½ tsp (3g) kosher salt
- ½ cup (115g) mayonnaise
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (5g) Dijon mustard
- ¼ tsp (1.5g) cracked black pepper
Instructions:
- Slice off the top 1/4 inch of the garlic head to expose the individual cloves.
- Place the head on a piece of foil, drizzle with 1 tbsp (15ml) olive oil, and sprinkle with salt.
- Wrap the garlic tightly in the foil. Place it directly on the oven rack at 400°F (200°C) for 30-40 minutes until the cloves are soft and pale gold.
- Allow the garlic to cool for 10 minutes before handling.
- Carefully squeeze the roasted cloves out of the papery skin into a small bowl and use a fork to mash the cloves into a smooth, buttery paste.
- Add the garlic paste, mayonnaise, lemon juice, Dijon mustard, and pepper to your food processor.
- Pulse on high for 30-60 seconds until the mixture is completely smooth and the color is uniform.
- Taste the sauce and adjust acidity with more lemon juice or salt if needed.
