Ingredients:

  • 1 whole head (approx. 50g) of garlic
  • 1 tbsp (15ml) extra virgin olive oil
  • ½ tsp (3g) kosher salt
  • ½ cup (115g) mayonnaise
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tsp (5g) Dijon mustard
  • ¼ tsp (1.5g) cracked black pepper

Instructions:

  1. Slice off the top 1/4 inch of the garlic head to expose the individual cloves.
  2. Place the head on a piece of foil, drizzle with 1 tbsp (15ml) olive oil, and sprinkle with salt.
  3. Wrap the garlic tightly in the foil. Place it directly on the oven rack at 400°F (200°C) for 30-40 minutes until the cloves are soft and pale gold.
  4. Allow the garlic to cool for 10 minutes before handling.
  5. Carefully squeeze the roasted cloves out of the papery skin into a small bowl and use a fork to mash the cloves into a smooth, buttery paste.
  6. Add the garlic paste, mayonnaise, lemon juice, Dijon mustard, and pepper to your food processor.
  7. Pulse on high for 30-60 seconds until the mixture is completely smooth and the color is uniform.
  8. Taste the sauce and adjust acidity with more lemon juice or salt if needed.
