Ingredients:

  • 1 lb ground beef
  • 16 oz Velveeta cheese, cubed
  • 8 oz cream cheese, cubed
  • 1 can (10 oz) Rotel Diced Tomatoes & Green Chilies

Instructions:

  1. Place the ground beef in a skillet over medium-high heat. Break the meat apart with a spatula and cook until it reaches a mahogany-brown color and no pink remains. Drain the excess grease thoroughly.
  2. Add the browned beef to the bottom of the slow cooker. Top the beef with the cubed Velveeta and cream cheese, then pour the entire can of Rotel (including the juices) over the top.
  3. Cover and cook on Low for 2 hours. Halfway through, give the mixture a gentle stir to move the cheese cubes.
  4. Once the cheese has completely melted into a velvety liquid, stir one final time until the mixture is unified and smooth.
