Ingredients:
- 1 lb ground breakfast sausage
- 1 lb Velveeta cheese, cubed into 1-inch pieces
- 4 oz cream cheese, cubed
- 2 cans (10 oz each) Ro-Tel diced tomatoes and green chilies
- 1/2 tsp garlic powder
- 1/4 cup fresh cilantro, chopped
Instructions:
- Place a large skillet over medium heat. Add the ground sausage, breaking it into small crumbles. Brown until fully cooked and a mahogany-colored crust develops. Retain approximately one tablespoon of rendered fat for flavor.
- Reduce heat to medium. Pour both cans of Ro-Tel (with juices) into the skillet. Use the liquid to deglaze the pan, scraping up any browned bits from the bottom.
- Add the cubed Velveeta and cream cheese. Stir constantly in a circular motion until the mixture is completely melted, smooth, and unified.
- Remove from heat and stir in the garlic powder. Transfer to a serving bowl and garnish with fresh chopped cilantro.
