Ingredients:

  • 1 lb ground breakfast sausage
  • 1 lb Velveeta cheese, cubed into 1-inch pieces
  • 4 oz cream cheese, cubed
  • 2 cans (10 oz each) Ro-Tel diced tomatoes and green chilies
  • 1/2 tsp garlic powder
  • 1/4 cup fresh cilantro, chopped

Instructions:

  1. Place a large skillet over medium heat. Add the ground sausage, breaking it into small crumbles. Brown until fully cooked and a mahogany-colored crust develops. Retain approximately one tablespoon of rendered fat for flavor.
  2. Reduce heat to medium. Pour both cans of Ro-Tel (with juices) into the skillet. Use the liquid to deglaze the pan, scraping up any browned bits from the bottom.
  3. Add the cubed Velveeta and cream cheese. Stir constantly in a circular motion until the mixture is completely melted, smooth, and unified.
  4. Remove from heat and stir in the garlic powder. Transfer to a serving bowl and garnish with fresh chopped cilantro.
