Ingredients:

  • 1 1/4 cups (150g) all-purpose flour, plus more for dusting
  • 1/2 teaspoon (2.5ml) granulated sugar
  • 1/4 teaspoon (1.2ml) salt
  • 1/2 cup (113g) unsalted butter, very cold and cut into small cubes
  • 1/4 cup (60ml) ice water
  • 4 medium apples (such as Honeycrisp, Granny Smith, or Gala), peeled, cored, and thinly sliced
  • 2 tablespoons (28g) unsalted butter, melted
  • 2 tablespoons (30ml) granulated sugar
  • 1 tablespoon (15ml) lemon juice
  • 1 teaspoon (5ml) ground cinnamon
  • 1/4 teaspoon (1.2ml) ground nutmeg
  • Pinch of salt
  • 1 large egg, beaten (optional)
  • 1 tablespoon (15ml) milk or water (optional)
  • 1 tablespoon (15ml) coarse sugar (such as turbinado or sanding sugar, optional)

Instructions:

  1. Combine flour, sugar, and salt in a bowl. Cut in cold butter until mixture resembles coarse crumbs. Gradually add ice water until dough just comes together.
  2. Form the dough into a disc, wrap tightly in plastic wrap, and chill for at least 30 minutes.
  3. In a large bowl, combine sliced apples, melted butter, sugar, lemon juice, cinnamon, nutmeg, and salt. Toss gently to coat.
  4. On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer to a baking sheet lined with parchment paper.
  5. Arrange the apple slices in a circular pattern on the dough, leaving a 2-inch border.
  6. Fold the edges of the dough over the apple filling, pleating as needed.
  7. Brush the dough with egg wash and sprinkle with coarse sugar (optional).
  8. Bake in a preheated oven at 375°F (190°C) for 35-45 minutes, or until the crust is golden brown and the apples are tender.
