Ingredients:

  • 1 tablespoon (15ml) apple cider vinegar
  • 4 medium apples (such as Honeycrisp, Granny Smith, or Gala), peeled, cored, and thinly sliced (about 4 cups)
  • 2 tablespoons (30g) unsalted butter, melted
  • ¼ cup (50g) granulated sugar
  • 2 tablespoons (15g) all-purpose flour
  • 1 teaspoon (5ml) lemon juice
  • ½ teaspoon (2.5ml) ground cinnamon
  • ¼ teaspoon (1.25ml) ground nutmeg
  • Pinch of salt
  • 1 large egg, lightly beaten
  • 1 tablespoon (15ml) milk or water
  • 2 tablespoons (25g) coarse sugar (such as turbinado or sanding sugar)

Instructions:

  1. Make the Dough: Whisk together flour and salt. Cut in cold butter until the mixture resembles coarse crumbs. Gradually add ice water and vinegar, mixing until the dough just comes together. Form into a disk, wrap in plastic wrap, and chill.
  2. Prepare the Filling: In a large bowl, toss the sliced apples with melted butter, sugar, flour, lemon juice, cinnamon, nutmeg, and salt.
  3. Assemble the Galette: On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer to a parchment-lined baking sheet.
  4. Arrange the Filling: Arrange the apple slices in an overlapping circle in the center of the dough, leaving a 2-inch border.
  5. Fold the Dough: Fold the edges of the dough over the apples, pleating as needed.
  6. Egg Wash (Optional): Brush the dough with egg wash.
  7. Sprinkle with Sugar (Optional): Sprinkle the galette with coarse sugar.
  8. Bake: Bake in a preheated oven until the crust is golden brown and the apples are tender.
  9. Cool: Let cool slightly before serving.
