Ingredients:

  • 1 pound Chicken of the Woods mushrooms, cleaned and cut into bite-sized pieces
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 2 tablespoons lemon juice, freshly squeezed
  • Fresh parsley, chopped, for serving

Instructions:

  1. Rinse the Chicken of the Woods under cool water to remove any dirt.
  2. Pat the mushrooms dry with a paper towel.
  3. Cut mushrooms into bite-sized pieces (about 1-inch).
  4. In a large skillet, heat olive oil over medium heat until shimmering.
  5. Add minced garlic to the skillet and sauté for 30 seconds, until fragrant but not browned.
  6. Add the mushroom pieces to the skillet and cook for 5-7 minutes, stirring occasionally, until golden brown and tender.
  7. Stir in thyme, salt, and pepper to taste, then drizzle with lemon juice and mix well.
  8. Transfer to a serving dish, garnish with chopped parsley, and enjoy!
