Ingredients:
- 1 pound Chicken of the Woods mushrooms, cleaned and cut into bite-sized pieces
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
- Salt and pepper to taste
- 2 tablespoons lemon juice, freshly squeezed
- Fresh parsley, chopped, for serving
Instructions:
- Rinse the Chicken of the Woods under cool water to remove any dirt.
- Pat the mushrooms dry with a paper towel.
- Cut mushrooms into bite-sized pieces (about 1-inch).
- In a large skillet, heat olive oil over medium heat until shimmering.
- Add minced garlic to the skillet and sauté for 30 seconds, until fragrant but not browned.
- Add the mushroom pieces to the skillet and cook for 5-7 minutes, stirring occasionally, until golden brown and tender.
- Stir in thyme, salt, and pepper to taste, then drizzle with lemon juice and mix well.
- Transfer to a serving dish, garnish with chopped parsley, and enjoy!
