Ingredients:

  • 8 oz (225g) low-fat cream cheese, softened to room temperature
  • 2 tbsp (30g) plain Greek yogurt
  • 1 tsp (5ml) fresh lemon juice
  • 3 scallions (approx. 40g), finely minced
  • 1/4 tsp (1.5g) sea salt
  • 1/4 tsp (1.2g) cracked black pepper

Instructions:

  1. Wash the scallions thoroughly and pat them completely dry with paper towels. Note: Excess water makes the spread runny.
  2. Mince the white and green parts of the scallions into tiny, uniform pieces.
  3. Place the softened cream cheese, Greek yogurt, and lemon juice into your medium mixing bowl.
  4. Beat the mixture with a spatula or whisk until it looks smooth and aerated.
  5. Add the sea salt and cracked black pepper to the base.
  6. Fold in the minced scallions using a gentle circular motion. Note: This keeps the greens from bruising.
  7. Stir just until the scallions are evenly distributed throughout the mix.
  8. Transfer the Scallion Cream Cheese to a small bowl or jar.
