Ingredients:
- 8 oz (225g) low-fat cream cheese, softened to room temperature
- 2 tbsp (30g) plain Greek yogurt
- 1 tsp (5ml) fresh lemon juice
- 3 scallions (approx. 40g), finely minced
- 1/4 tsp (1.5g) sea salt
- 1/4 tsp (1.2g) cracked black pepper
Instructions:
- Wash the scallions thoroughly and pat them completely dry with paper towels. Note: Excess water makes the spread runny.
- Mince the white and green parts of the scallions into tiny, uniform pieces.
- Place the softened cream cheese, Greek yogurt, and lemon juice into your medium mixing bowl.
- Beat the mixture with a spatula or whisk until it looks smooth and aerated.
- Add the sea salt and cracked black pepper to the base.
- Fold in the minced scallions using a gentle circular motion. Note: This keeps the greens from bruising.
- Stir just until the scallions are evenly distributed throughout the mix.
- Transfer the Scallion Cream Cheese to a small bowl or jar.
