Ingredients:

  • 1 cup (240 ml) coconut milk (canned or carton)
  • 1/2 cup (120 ml) pineapple juice
  • 1 ripe banana, sliced
  • 1/4 cup (60 ml) cream of coconut (not coconut cream)
  • 1 tablespoon (15 ml) grenadine
  • 6-8 ice cubes
  • Optional: Green food coloring (for extra vibrancy)
  • Whipped cream (optional)
  • Pineapple slices (optional)
  • Maraschino cherries (optional)

Instructions:

  1. Gather and measure all ingredients.
  2. Combine coconut milk, pineapple juice, banana, and cream of coconut in the blender.
  3. Blend until smooth and creamy.
  4. If desired, add a few drops of green food coloring and blend until fully incorporated.
  5. Fill two tall glasses with ice cubes.
  6. Carefully pour the blended mixture over the ice in each glass.
  7. Slowly pour 1/2 tablespoon of grenadine into each glass for a fun layered effect.
  8. Top with whipped cream and garnish with pineapple slices and cherries, if desired.
  9. Serve immediately with a colorful straw!
