- 2 tablespoons extra virgin olive oil (30 ml)
- 2 tablespoons fresh lemon juice (30 ml)
- ½ teaspoon sea salt (2.5g), or to taste
- ¼ teaspoon black pepper (1.25g), freshly ground, or to taste
Instructions:
- Peel and finely dice the cucumbers, tomatoes, and red onion. Ensure the dice are relatively uniform for the best texture and presentation.
- Finely chop the fresh mint and parsley. Fresh herbs are key to the bright flavor of this salad.
- In a mixing bowl, gently combine the diced cucumbers, tomatoes, red onion, mint, and parsley.
