  • 2 tablespoons extra virgin olive oil (30 ml)
  • 2 tablespoons fresh lemon juice (30 ml)
  • ½ teaspoon sea salt (2.5g), or to taste
  • ¼ teaspoon black pepper (1.25g), freshly ground, or to taste

Instructions:

  1. Peel and finely dice the cucumbers, tomatoes, and red onion. Ensure the dice are relatively uniform for the best texture and presentation.
  2. Finely chop the fresh mint and parsley. Fresh herbs are key to the bright flavor of this salad.
  3. In a mixing bowl, gently combine the diced cucumbers, tomatoes, red onion, mint, and parsley.
  4. Drizzle the olive oil and lemon juice over the vegetables. Season with salt and pepper to taste.
  5. Gently toss the salad to ensure all the ingredients are evenly coated. For enhanced flavor, cover and chill in the refrigerator for at least 30 minutes before serving.
