Ingredients:
- 4 (6-ounce/170g) salmon fillets, skin on or off
- 1 ½ pounds (680g) Yukon Gold potatoes, peeled and cut into 1-inch chunks
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 lemon, sliced into rounds
- Fresh parsley, chopped (optional)
- Extra lemon wedges (optional)
Instructions:
- Preheat oven to 400°F (200°C). Lightly grease a baking sheet.
- In a large bowl, combine potatoes, minced garlic, olive oil, oregano, smoked paprika, salt, and pepper. Toss to coat evenly.
- Spread the potatoes in a single layer on the prepared baking sheet. Bake for 15 minutes.
- Remove baking sheet from oven. Arrange the salmon fillets among the potatoes. Place lemon slices on top of the salmon.
- Return to oven and bake for another 10-15 minutes, or until the salmon is cooked through and flakes easily with a fork and the potatoes are tender.
- Garnish with fresh parsley and serve with extra lemon wedges, if desired. Enjoy your salmon al horno con patatas!
