Ingredients:

  • 4 (6-ounce/170g) salmon fillets, skin on or off
  • 1 ½ pounds (680g) Yukon Gold potatoes, peeled and cut into 1-inch chunks
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 lemon, sliced into rounds
  • Fresh parsley, chopped (optional)
  • Extra lemon wedges (optional)

Instructions:

  1. Preheat oven to 400°F (200°C). Lightly grease a baking sheet.
  2. In a large bowl, combine potatoes, minced garlic, olive oil, oregano, smoked paprika, salt, and pepper. Toss to coat evenly.
  3. Spread the potatoes in a single layer on the prepared baking sheet. Bake for 15 minutes.
  4. Remove baking sheet from oven. Arrange the salmon fillets among the potatoes. Place lemon slices on top of the salmon.
  5. Return to oven and bake for another 10-15 minutes, or until the salmon is cooked through and flakes easily with a fork and the potatoes are tender.
  6. Garnish with fresh parsley and serve with extra lemon wedges, if desired. Enjoy your salmon al horno con patatas!
