Ingredients:

  • 1 cup (2 sticks or 227g) unsalted butter, softened (but still slightly cool)
  • 3-4 cups (360-480g) powdered sugar, sifted
  • 1/4 cup (60ml) heavy cream or whole milk
  • 2 teaspoons (10ml) pure vanilla extract
  • Pinch of salt

Instructions:

  1. In a large mixing bowl, beat the softened butter with a mixer until light and fluffy.
  2. Gradually add the sifted powdered sugar, one cup at a time, beating on low speed until combined after each addition.
  3. Add the heavy cream (or milk) and vanilla extract.
  4. Increase the mixer speed to medium-high and beat for 2-3 minutes, until light and fluffy. Don't over-beat, or it can become too soft.
  5. If the icing is too thick, add a teaspoon or two more of heavy cream. If it’s too thin, add a tablespoon or two more of powdered sugar.
  6. Add a pinch of salt, then give it a taste and adjust the vanilla flavour if desired.
  7. For a firmer consistency, chill for 5-10 minutes.
