Ingredients:
- 1 cup (2 sticks or 227g) unsalted butter, softened (but still slightly cool)
- 3-4 cups (360-480g) powdered sugar, sifted
- 1/4 cup (60ml) heavy cream or whole milk
- 2 teaspoons (10ml) pure vanilla extract
- Pinch of salt
Instructions:
- In a large mixing bowl, beat the softened butter with a mixer until light and fluffy.
- Gradually add the sifted powdered sugar, one cup at a time, beating on low speed until combined after each addition.
- Add the heavy cream (or milk) and vanilla extract.
- Increase the mixer speed to medium-high and beat for 2-3 minutes, until light and fluffy. Don't over-beat, or it can become too soft.
- If the icing is too thick, add a teaspoon or two more of heavy cream. If it’s too thin, add a tablespoon or two more of powdered sugar.
- Add a pinch of salt, then give it a taste and adjust the vanilla flavour if desired.
- For a firmer consistency, chill for 5-10 minutes.
