Ingredients:

  • 1 pound (450g) boneless, skinless chicken breasts, diced
  • 8 ounces (225g) penne pasta
  • 4 ounces (113g) cream cheese, softened
  • 1 tablespoon ranch seasoning mix
  • 1 cup (240ml) chicken broth
  • 1 cup (100g) shredded sharp cheddar cheese
  • 5 slices bacon, cooked and crumbled
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped green onions, for garnish

Instructions:

  1. In a pot of salted boiling water, cook the penne pasta according to package instructions until al dente; drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Season diced chicken with salt and pepper. Add chicken to the skillet and sauté until golden brown and cooked through, about 6-7 minutes.
  3. Once chicken is cooked, reduce heat and stir in cream cheese and ranch seasoning. Pour in chicken broth and stir until the mixture is smooth and creamy.
  4. Add the cooked penne pasta and shredded cheddar cheese into the skillet. Toss until pasta is well-coated with the sauce and cheese melts, about 2-3 minutes.
  5. Stir in crumbled bacon and remove from heat. Garnish with chopped green onions.
