Ingredients:
- 1 pound (450g) boneless, skinless chicken breasts, diced
- 8 ounces (225g) penne pasta
- 4 ounces (113g) cream cheese, softened
- 1 tablespoon ranch seasoning mix
- 1 cup (240ml) chicken broth
- 1 cup (100g) shredded sharp cheddar cheese
- 5 slices bacon, cooked and crumbled
- 2 tablespoons olive oil
- Salt and pepper to taste
- Chopped green onions, for garnish
Instructions:
- In a pot of salted boiling water, cook the penne pasta according to package instructions until al dente; drain and set aside.
- Heat olive oil in a large skillet over medium heat. Season diced chicken with salt and pepper. Add chicken to the skillet and sauté until golden brown and cooked through, about 6-7 minutes.
- Once chicken is cooked, reduce heat and stir in cream cheese and ranch seasoning. Pour in chicken broth and stir until the mixture is smooth and creamy.
- Add the cooked penne pasta and shredded cheddar cheese into the skillet. Toss until pasta is well-coated with the sauce and cheese melts, about 2-3 minutes.
- Stir in crumbled bacon and remove from heat. Garnish with chopped green onions.
