  • 5 lbs (2.5 kg) Starchy Potatoes (Russet or King Edward), peeled and cut into 1.5-inch chunks
  • 10 large Garlic Cloves, lightly smashed
  • 2 cups (480 ml) Chicken or Vegetable Stock, low-sodium
  • 4 tbsp (55 g) Unsalted Butter, cubed (for cooking)
  • 5 tsp Kosher Salt (for cooking)
  • 5 tsp Freshly ground Black Pepper
  • 8 tbsp (115 g) Unsalted Butter, softened (for finishing)
  • 4 oz (113 g) Full-Fat Cream Cheese (optional), softened
  • 1/2 cup to 3/4 cup (120 ml to 180 ml) Whole Milk or Heavy Cream, warmed
  • 2 tbsp Fresh Parsley or Chives, chopped (for garnish)

Instructions:

  1. Prep the Ingredients: Peel the potatoes and cut them into uniform 1.5-inch (4 cm) chunks. Peel and lightly smash the garlic cloves.
  2. Load the Slow Cooker: Place the prepared potato chunks, smashed garlic, 4 tablespoons of butter, stock, 1.5 teaspoons of salt, and pepper into the slow cooker basin.
  3. Set and Cook: Stir the mixture gently to distribute the seasoning. Place the lid on the slow cooker. Cook on HIGH for 3 to 4 hours or on LOW for 6 to 7 hours.
  4. Test for Doneness: The potatoes are ready when they are completely fork-tender and begin to break apart easily with gentle pressure.
  5. Drain Thoroughly: Carefully pour the potatoes and remaining liquid into a large colander placed over a sink. Allow the potatoes to drain for at least 5 minutes, shaking the colander gently to remove excess moisture. This is critical for creamy, non-waterlogged mash.
  6. Return to Pot: Transfer the hot, drained potatoes (including the soft, cooked garlic) back into the empty slow cooker basin.
  7. Add Fats: Add the remaining 8 tablespoons of softened butter and the optional cream cheese (if using) to the hot potatoes. Let them melt for 2 minutes.
  8. Mash: Using a potato masher or ricer, thoroughly mash the potatoes until they are smooth and no lumps remain.
  9. Incorporate Dairy: Gradually pour in the warmed milk or cream while stirring and beating the potatoes aggressively with a wooden spoon or spatula. Only add enough dairy to achieve your desired consistency.
  10. Taste and Adjust: Taste the finished mash and adjust seasoning with additional salt and pepper as needed. Garnish with parsley or chives.
  11. Serve or Hold: Serve immediately, or set the slow cooker to the 'Keep Warm' setting. Stir every 30-45 minutes if holding for longer than two hours.
