Ingredients:
- 1 pound smoked sausage, sliced
- 1 medium onion, diced
- 2 cups frozen mixed bell peppers
- 4 cloves garlic, minced
- 1 (10.5 oz) can cream of mushroom soup
- 1 (10 oz) can diced tomatoes with green chilies, undrained
- 1 cup chicken broth
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup sour cream
Instructions:
- Slice smoked sausage and dice onion. Mince garlic.
- In the slow cooker, add smoked sausage, diced onion, frozen bell peppers, and garlic.
- Pour in cream of mushroom soup, diced tomatoes with green chilies, and chicken broth.
- Stir to combine, cover, and set the slow cooker to low for 6-8 hours or high for 3-4 hours.
- In a separate bowl, combine shredded cheddar cheese, mozzarella cheese, and sour cream.
- About 30 minutes before serving, stir in the cheese mixture until melted and creamy.
- Garnish if desired and enjoy hot.
