Ingredients:

  • 1 pound smoked sausage, sliced
  • 1 medium onion, diced
  • 2 cups frozen mixed bell peppers
  • 4 cloves garlic, minced
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 (10 oz) can diced tomatoes with green chilies, undrained
  • 1 cup chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup sour cream

Instructions:

  1. Slice smoked sausage and dice onion. Mince garlic.
  2. In the slow cooker, add smoked sausage, diced onion, frozen bell peppers, and garlic.
  3. Pour in cream of mushroom soup, diced tomatoes with green chilies, and chicken broth.
  4. Stir to combine, cover, and set the slow cooker to low for 6-8 hours or high for 3-4 hours.
  5. In a separate bowl, combine shredded cheddar cheese, mozzarella cheese, and sour cream.
  6. About 30 minutes before serving, stir in the cheese mixture until melted and creamy.
  7. Garnish if desired and enjoy hot.
