Ingredients:
- 4 medium baking apples (such as Honeycrisp, Gala, or Braeburn), cored (about 1.8kg)
- 2 tablespoons (30ml) unsalted butter, softened (plus extra for greasing)
- 1/4 cup (50g) packed light brown sugar
- 1 teaspoon ground cinnamon (5ml)
- 1/2 teaspoon ground nutmeg (2.5ml)
- 1/4 teaspoon ground cloves (1.25ml)
- 2 tablespoons (30ml) apple cider or apple juice
- Optional: 1/4 cup (30g) raisins or chopped walnuts
- 1/2 cup (65g) all-purpose flour
- 1/4 cup (50g) packed light brown sugar
- 1/4 teaspoon ground cinnamon (1.25ml)
- 1/4 cup (55g) cold unsalted butter, cubed
Instructions:
- Preheat oven to 375°F (190°C/ Gas Mark 5). Grease the baking dish.
- Core the apples, leaving the bottom intact.
- In a small bowl, combine the softened butter, brown sugar, cinnamon, nutmeg, and cloves.
- Stuff each apple with the spice mixture. Add raisins or walnuts if using.
- Place the filled apples in the prepared baking dish. Pour apple cider or juice around the base of the apples.
- In a separate bowl, combine flour, brown sugar, and cinnamon. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Sprinkle the crumble topping evenly over the filled apples.
- Bake for 45 minutes, or until the apples are tender and the crumble topping is golden brown. Check tenderness with a fork.
- Let cool slightly before serving.
