Ingredients:

  • 4 medium baking apples (such as Honeycrisp, Gala, or Braeburn), cored (about 1.8kg)
  • 2 tablespoons (30ml) unsalted butter, softened (plus extra for greasing)
  • 1/4 cup (50g) packed light brown sugar
  • 1 teaspoon ground cinnamon (5ml)
  • 1/2 teaspoon ground nutmeg (2.5ml)
  • 1/4 teaspoon ground cloves (1.25ml)
  • 2 tablespoons (30ml) apple cider or apple juice
  • Optional: 1/4 cup (30g) raisins or chopped walnuts
  • 1/2 cup (65g) all-purpose flour
  • 1/4 cup (50g) packed light brown sugar
  • 1/4 teaspoon ground cinnamon (1.25ml)
  • 1/4 cup (55g) cold unsalted butter, cubed

Instructions:

  1. Preheat oven to 375°F (190°C/ Gas Mark 5). Grease the baking dish.
  2. Core the apples, leaving the bottom intact.
  3. In a small bowl, combine the softened butter, brown sugar, cinnamon, nutmeg, and cloves.
  4. Stuff each apple with the spice mixture. Add raisins or walnuts if using.
  5. Place the filled apples in the prepared baking dish. Pour apple cider or juice around the base of the apples.
  6. In a separate bowl, combine flour, brown sugar, and cinnamon. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  7. Sprinkle the crumble topping evenly over the filled apples.
  8. Bake for 45 minutes, or until the apples are tender and the crumble topping is golden brown. Check tenderness with a fork.
  9. Let cool slightly before serving.
