Ingredients:
- 1 lb boneless, skinless chicken breasts or thighs (cut into bite-sized pieces)
- 2 tablespoons olive oil
- Salt and pepper (to taste)
- 3 tablespoons unsalted butter
- 3 cloves garlic (minced)
- ½ cup BBQ sauce (store-bought or homemade)
- 2 tablespoons honey
- 1 tablespoon apple cider vinegar (optional, for tanginess)
- 8 small flour or corn tortillas
- Toppings of choice: shredded lettuce, diced tomatoes, sliced avocado, shredded cheese, sour cream, cilantro, lime wedges
Instructions:
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken pieces with salt and pepper.
- Add chicken to the skillet and cook for 5–7 minutes, stirring occasionally until golden brown and cooked through.
- Remove chicken and set aside.
- In the same skillet, melt butter over medium heat.
- Add minced garlic and sauté for 30 seconds to 1 minute until fragrant.
- Stir in BBQ sauce, honey, and apple cider vinegar (if using) and whisk until smooth.
- Return chicken to skillet, tossing to coat in the sauce. Simmer for 2–3 minutes.
- Heat tortillas in a dry skillet, on a griddle, or wrapped in foil in the oven until soft and pliable.
- Divide the garlic butter honey BBQ chicken evenly among warmed tortillas.
- Add chosen toppings such as lettuce, tomatoes, avocado, cheese, and sour cream.
- Garnish with cilantro and a squeeze of lime juice.
- Serve tacos immediately with extra lime wedges on the side.
