Ingredients:
- 4 bratwurst sausages (about 1 pound / 450g)
- 1 tablespoon vegetable oil (15 ml)
- 1 medium onion, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 cloves garlic, minced
- 1 medium zucchini, sliced
- 1 teaspoon dried oregano (5 g)
- 1 teaspoon smoked paprika (5 g)
- Salt and pepper to taste
Instructions:
- Slice the onions, bell peppers, and zucchini; mince the garlic.
- Heat oil in a large skillet over medium-high heat. Add bratwurst and sear for about 3-4 minutes on each side until golden brown.
- Reduce heat to medium-low and add a splash of water. Cover and simmer for 10-12 minutes until cooked through (internal temperature should reach 160°F / 71°C).
- In the same skillet, add the onions and bell peppers. Sauté for about 5 minutes until softened.
- Add minced garlic, zucchini, oregano, paprika, salt, and pepper. Sauté for another 4-5 minutes, stirring occasionally, until veggies are tender.
- Slice brats, serve over sautéed veggies, and garnish with fresh herbs if desired.
