Ingredients:

  • 1 French Baguette (250g), sliced into 24 half-inch rounds
  • 1 tbsp extra virgin olive oil
  • 1 cup part-skim ricotta cheese
  • 2 tbsp wildflower honey
  • 0.5 tsp pure vanilla bean paste
  • 1 tsp lemon zest, finely grated
  • 1 lb fresh strawberries
  • 1 tbsp fresh mint leaves for garnish

Instructions:

  1. Preheat oven to 375°F (190°C). Arrange baguette slices on a sheet pan, brush lightly with olive oil, and bake for 5 minutes until golden and crisp.
  2. Prepare the strawberries by cutting a 'V' shape into the top to remove the stem and core. Slice vertically into 1/4 inch thick slices to reveal heart shapes.
  3. In a mixing bowl, combine ricotta, honey, vanilla, and lemon zest. Whip with a hand mixer on high for 2 minutes until glossy and smooth.
  4. Spread one tablespoon of the ricotta mixture onto each toasted baguette round. Top with 1-2 strawberry hearts and garnish with mint.
