Ingredients:
- 16 oz pre-made sugar cookie dough
- 0.25 cup all-purpose flour
- 1 tsp vanilla extract
- 8 oz full-fat cream cheese, softened
- 0.25 cup unsalted butter, softened
- 1.5 cups powdered sugar, sifted
- 1 tsp fresh lemon zest
- 1 cup fresh strawberries, hulled and sliced
- 0.5 cup fresh blueberries
- 0.5 cup fresh raspberries
- 0.5 cup fresh blackberries
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 12-inch round pizza pan or line it with parchment paper.
- In a medium bowl, break up the pre-made sugar cookie dough and knead in 1/4 cup of all-purpose flour and 1 teaspoon of vanilla extract until fully incorporated.
- Press the dough evenly into the prepared pizza pan, leaving about 1/2 inch of space at the edges to allow for slight spreading during baking.
- Bake for 10–12 minutes until the surface appears matte and the edges are just beginning to turn a light golden brown. Remove from the oven and allow the crust to cool completely.
- In a large bowl using a hand mixer, beat the softened cream cheese and butter together until smooth. Gradually add the powdered sugar and lemon zest, beating until the frosting is velvety and stable.
- Using an offset spatula, spread the cream cheese frosting in an even layer over the cooled cookie crust, leaving a small border at the edge.
- Ensure all washed berries are completely dry. Arrange the strawberries, blueberries, raspberries, and blackberries in a decorative pattern over the frosting. Garnish with fresh mint if desired. Slice and serve.
