Ingredients:

  • 16 oz pre-made sugar cookie dough
  • 0.25 cup all-purpose flour
  • 1 tsp vanilla extract
  • 8 oz full-fat cream cheese, softened
  • 0.25 cup unsalted butter, softened
  • 1.5 cups powdered sugar, sifted
  • 1 tsp fresh lemon zest
  • 1 cup fresh strawberries, hulled and sliced
  • 0.5 cup fresh blueberries
  • 0.5 cup fresh raspberries
  • 0.5 cup fresh blackberries

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 12-inch round pizza pan or line it with parchment paper.
  2. In a medium bowl, break up the pre-made sugar cookie dough and knead in 1/4 cup of all-purpose flour and 1 teaspoon of vanilla extract until fully incorporated.
  3. Press the dough evenly into the prepared pizza pan, leaving about 1/2 inch of space at the edges to allow for slight spreading during baking.
  4. Bake for 10–12 minutes until the surface appears matte and the edges are just beginning to turn a light golden brown. Remove from the oven and allow the crust to cool completely.
  5. In a large bowl using a hand mixer, beat the softened cream cheese and butter together until smooth. Gradually add the powdered sugar and lemon zest, beating until the frosting is velvety and stable.
  6. Using an offset spatula, spread the cream cheese frosting in an even layer over the cooled cookie crust, leaving a small border at the edge.
  7. Ensure all washed berries are completely dry. Arrange the strawberries, blueberries, raspberries, and blackberries in a decorative pattern over the frosting. Garnish with fresh mint if desired. Slice and serve.
