  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 6 tablespoons (85g) unsalted butter, cold and cut into cubes
  • 1/2 cup (120ml) milk (full-fat or semi-skimmed)
  • 1 tablespoon granulated sugar (for sprinkling)

Instructions:

  1. Preheat oven to 375°F (190°C/Gas Mark 5).
  2. In a large bowl, combine berries, sugar, cornstarch, lemon juice, cinnamon (if using), and salt. Toss gently to coat.
  3. Pour the berry mixture into a 9-inch baking dish.
  4. In a separate bowl, whisk together flour, sugar, baking powder, and salt.
  5. Cut the cold butter into the dry ingredients using a pastry blender or your fingertips, until the mixture resembles coarse crumbs.
  6. Gradually add the milk, stirring until just combined. Do not overmix. The dough will be shaggy.
  7. Drop spoonfuls of the biscuit dough evenly over the berry filling.
  8. Sprinkle the topping with remaining sugar.
  9. Bake for 35-40 minutes, or until the topping is golden brown and the berry filling is bubbly.
