- 1 1/2 cups (180g) all-purpose flour (plain flour)
- 1/4 cup (50g) granulated sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 6 tablespoons (85g) unsalted butter, cold and cut into cubes
- 1/2 cup (120ml) milk (full-fat or semi-skimmed)
- 1 tablespoon granulated sugar (for sprinkling)
Instructions:
- Preheat oven to 375°F (190°C/Gas Mark 5).
- In a large bowl, combine berries, sugar, cornstarch, lemon juice, cinnamon (if using), and salt. Toss gently to coat.
- Pour the berry mixture into a 9-inch baking dish.
- In a separate bowl, whisk together flour, sugar, baking powder, and salt.
- Cut the cold butter into the dry ingredients using a pastry blender or your fingertips, until the mixture resembles coarse crumbs.
- Gradually add the milk, stirring until just combined. Do not overmix. The dough will be shaggy.
- Drop spoonfuls of the biscuit dough evenly over the berry filling.
- Sprinkle the topping with remaining sugar.
- Bake for 35-40 minutes, or until the topping is golden brown and the berry filling is bubbly.
