Ingredients:
- 1 large Ripe Mango (approx. 300g), peeled and diced
- 1 cup Fresh Pineapple (approx. 200g), diced
- 1/4 cup Red Onion (40g), finely minced
- 1 small Jalapeño Pepper (15g), finely minced (seeds and membrane removed for mild heat)
- 1/2 cup Fresh Coriander (Cilantro), roughly chopped
- 2 Tbsp Freshly squeezed Lime Juice (30 ml)
- 1/4 tsp Sea Salt (1.5g)
Instructions:
- Prepare the Mango and Pineapple: Peel, core (for pineapple), and dice both fruits into small, uniform pieces (approximately 1 cm cubes). Place the diced fruit directly into the mixing bowl.
- Mince the Aromatics: Finely mince the red onion. Carefully mince the jalapeño, ensuring seeds and membrane are removed for a milder salsa. Add the minced jalapeño and red onion to the fruit.
- Chop the Herbs: Roughly chop the fresh coriander (cilantro) and add it to the bowl.
- Add the Acid and Seasoning: Pour the freshly squeezed lime juice over the mixture. Sprinkle the sea salt over the ingredients.
- Mix Gently: Gently fold all ingredients together using a rubber spatula until evenly combined. Taste the mixture and adjust the seasoning by adding a pinch more salt or a dash more lime juice for extra zing.
- Rest and Marry: Cover the bowl tightly with cling film and refrigerate for a minimum of 30 minutes. This chilling period allows the flavors to meld together fully.
- Final Toss and Serve: Before serving, give the salsa one final, gentle toss and adjust salt or spice if necessary. Serve immediately with chips or grilled protein.
