Ingredients:
- 1 large sweet potato (about 300g / 10.5 oz), scrubbed clean
- 1 tablespoon olive oil (15ml)
- 1/4 teaspoon sea salt (1.5g)
- 1/4 teaspoon black pepper (freshly ground, 1.5g)
- 1 ripe avocado
- 1 tablespoon lime juice (15 ml)
- Pinch of red pepper flakes (optional)
- Salt and pepper to taste
- Everything bagel seasoning (optional)
- Fried egg (optional)
- Smoked salmon (optional)
- Ricotta cheese (optional)
- Honey (optional)
- Fresh herbs (chives, parsley, dill) (optional)
Instructions:
- Preheat oven to 200°C (400°F/Gas Mark 6). Line a baking sheet with parchment paper (optional, but makes cleanup easier).
- Carefully slice the sweet potato lengthwise into ½-inch (1.25cm) thick slices. Aim for even thickness for even cooking.
- Toss sweet potato slices with olive oil, salt, and pepper. Arrange in a single layer on the prepared baking sheet. Roast for 25-30 minutes, flipping halfway, until tender and slightly caramelized. Look for a fork to easily pierce the sweet potato.
- While the sweet potato is roasting, mash the avocado in a bowl. Add lime juice, red pepper flakes (if using), salt, and pepper.
- Once the sweet potato slices are roasted, transfer them to plates. Spread with mashed avocado (or your chosen topping). Add any additional toppings, such as a fried egg, herbs, or a drizzle of honey.
- Serve your Sweet Potato Toast immediately while it's still warm!
