Ingredients:
- 1 lb lean ground beef
- 1/2 cup water
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 large 10-inch flour tortillas
- 1 cup refried beans
- 2 cups cooked Mexican-style rice
- 1 1/2 cups shredded nacho cheese blend
- 1 cup corn chips
- 1/2 cup sour cream
- 2 tbsp butter
Instructions:
- Place the ground beef in a skillet over medium-high heat. Break it apart with a spatula and cook until mahogany-brown with no pink remaining. Drain excess grease.
- Stir in the water, chili powder, ground cumin, garlic powder, smoked paprika, salt, and black pepper. Simmer for 5 minutes until the liquid reduces into a thick glaze.
- Warm tortillas in the microwave for 10 seconds to make them pliable.
- Layer each tortilla with a thin spread of refried beans, a scoop of Mexican rice, and a portion of the seasoned beef.
- Sprinkle shredded nacho cheese over the hot beef, then add a dollop of sour cream and a handful of corn chips.
- Fold the sides of the tortilla inward and roll tightly.
- Melt butter in a skillet over medium heat. Place burritos seam-side down and press firmly with a spatula or second heavy pan for 2 minutes per side until golden brown.
