Ingredients:
- 1 pound (450g) ground beef
- 1 medium onion, chopped (approximately 1 cup / 150g)
- 1 packet (1 ounce / 28g) taco seasoning mix
- 1 cup (240ml) water
- 1 (15-ounce / 425g) can black beans, rinsed and drained
- 1 (15-ounce / 425g) can corn, drained
- 2 cups (225g) shredded cheddar cheese
- 1 cup (113g) shredded Monterey Jack cheese
- 8 ounces (225g) bag of tortilla chips, lightly crushed (plain or lightly salted)
- Sour cream (optional)
- Salsa (optional)
- Guacamole (optional)
- Chopped tomatoes (optional)
- Sliced green onions (optional)
- Shredded lettuce (optional)
- Hot sauce (optional)
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large skillet over medium-high heat, brown the ground beef. Drain off any excess grease.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes.
- Stir in the taco seasoning mix and water. Bring to a simmer and cook for 5 minutes, or until slightly thickened.
- Add the black beans and corn to the skillet. Stir to combine.
- Spread the beef mixture evenly in the bottom of the prepared baking dish.
- Sprinkle the shredded cheddar and Monterey Jack cheeses evenly over the beef mixture.
- Arrange the crushed tortilla chips evenly over the cheese layer.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the tortilla chips are golden brown.
- Let the casserole cool for a few minutes before serving.
- Top with your favorite toppings, such as sour cream, salsa, guacamole, tomatoes, green onions, and lettuce.
