Ingredients:

  • 1 pound (450g) ground beef
  • 1 medium onion, chopped (approximately 1 cup / 150g)
  • 1 packet (1 ounce / 28g) taco seasoning mix
  • 1 cup (240ml) water
  • 1 (15-ounce / 425g) can black beans, rinsed and drained
  • 1 (15-ounce / 425g) can corn, drained
  • 2 cups (225g) shredded cheddar cheese
  • 1 cup (113g) shredded Monterey Jack cheese
  • 8 ounces (225g) bag of tortilla chips, lightly crushed (plain or lightly salted)
  • Sour cream (optional)
  • Salsa (optional)
  • Guacamole (optional)
  • Chopped tomatoes (optional)
  • Sliced green onions (optional)
  • Shredded lettuce (optional)
  • Hot sauce (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium-high heat, brown the ground beef. Drain off any excess grease.
  3. Add the chopped onion to the skillet and cook until softened, about 5 minutes.
  4. Stir in the taco seasoning mix and water. Bring to a simmer and cook for 5 minutes, or until slightly thickened.
  5. Add the black beans and corn to the skillet. Stir to combine.
  6. Spread the beef mixture evenly in the bottom of the prepared baking dish.
  7. Sprinkle the shredded cheddar and Monterey Jack cheeses evenly over the beef mixture.
  8. Arrange the crushed tortilla chips evenly over the cheese layer.
  9. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the tortilla chips are golden brown.
  10. Let the casserole cool for a few minutes before serving.
  11. Top with your favorite toppings, such as sour cream, salsa, guacamole, tomatoes, green onions, and lettuce.
