Ingredients:
- 1/2 cup (1 stick, 113g) unsalted butter, melted and cooled slightly
- 3 large eggs
- 1 teaspoon pure vanilla extract (5ml)
- 3/4 cup (150g) granulated sugar
- 1/4 cup (50g) packed light brown sugar
- 1/2 cup (120ml) buttermilk
- 1 1/2 cups (about 3 medium/large) mashed ripe bananas (approximately 330g)
- 2 cups (250g) all-purpose flour
- 1 teaspoon baking soda (5g)
- 1 teaspoon baking powder (5g)
- 1/2 teaspoon ground cinnamon (2.5g)
- 1/4 teaspoon salt (1.5g)
Instructions:
- Preheat oven to 375°F (190°C). Line muffin tin with liners or grease well.
- Melt butter and let cool slightly.
- In a large bowl, whisk together the melted butter, eggs, vanilla extract, granulated sugar, and brown sugar.
- Add the buttermilk and mashed bananas to the wet ingredients and stir to combine.
- In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix!
- Fill each muffin liner about 2/3 full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
