Ingredients:

  • 1/2 cup (1 stick, 113g) unsalted butter, melted and cooled slightly
  • 3 large eggs
  • 1 teaspoon pure vanilla extract (5ml)
  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) packed light brown sugar
  • 1/2 cup (120ml) buttermilk
  • 1 1/2 cups (about 3 medium/large) mashed ripe bananas (approximately 330g)
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking soda (5g)
  • 1 teaspoon baking powder (5g)
  • 1/2 teaspoon ground cinnamon (2.5g)
  • 1/4 teaspoon salt (1.5g)

Instructions:

  1. Preheat oven to 375°F (190°C). Line muffin tin with liners or grease well.
  2. Melt butter and let cool slightly.
  3. In a large bowl, whisk together the melted butter, eggs, vanilla extract, granulated sugar, and brown sugar.
  4. Add the buttermilk and mashed bananas to the wet ingredients and stir to combine.
  5. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix!
  7. Fill each muffin liner about 2/3 full.
  8. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
