Ingredients:
- 6 slices bologna (approx. 12 oz / 340 g)
- 4 slices bread (white, whole wheat, or sourdough)
- 2 tbsp mayonnaise (30 g)
- 2 thick slices tomato (approx. 5 oz / 140 g)
- 2 slices cheddar cheese (or cheese of choice)
- Cooking spray or butter for frying
Instructions:
- Spread 1 tbsp mayonnaise on one side of each of two slices of bread. Layer on a thick slice of tomato and a slice of cheddar cheese.
- Heat skillet over medium-high heat
- Place three slices of fried bologna on each prepared bread slice with tomato and cheese.
- Top sandwiches with remaining bread slices. Toast each side in the skillet until golden brown, or use a sandwich press.
- Remove from skillet, cut in half if desired, and serve hot.
