Ingredients:

  • 6 slices bologna (approx. 12 oz / 340 g)
  • 4 slices bread (white, whole wheat, or sourdough)
  • 2 tbsp mayonnaise (30 g)
  • 2 thick slices tomato (approx. 5 oz / 140 g)
  • 2 slices cheddar cheese (or cheese of choice)
  • Cooking spray or butter for frying

Instructions:

  1. Spread 1 tbsp mayonnaise on one side of each of two slices of bread. Layer on a thick slice of tomato and a slice of cheddar cheese.
  2. Heat skillet over medium-high heat
  3. Place three slices of fried bologna on each prepared bread slice with tomato and cheese.
  4. Top sandwiches with remaining bread slices. Toast each side in the skillet until golden brown, or use a sandwich press.
  5. Remove from skillet, cut in half if desired, and serve hot.
