Ingredients:

  • 1.5 lbs (680g) boneless, skinless chicken breasts, trimmed
  • 1 large egg
  • 1/4 cup (25g) grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup (120ml) marinara sauce (low-sodium recommended)
  • 1 1/2 cups (170g) shredded mozzarella cheese (part-skim)
  • 1/2 cup sliced mushrooms
  • 1/4 cup sliced bell peppers (any color)
  • 1/4 cup sliced red onion
  • 1/4 cup black olives, sliced
  • Optional: Pepperoni, cooked sausage, spinach, cherry tomatoes, fresh basil

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Process chicken breasts in a food processor until finely ground (almost paste-like).
  3. In a large bowl, combine ground chicken with egg, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper. Mix well until evenly distributed.
  4. Spread chicken mixture evenly onto the prepared baking sheet, forming a 12-inch (30cm) circle. Use slightly dampened hands to prevent sticking.
  5. Bake for 20-25 minutes, or until the crust is cooked through and lightly browned. Ensure internal temperature reaches 165°F (74°C).
  6. Remove from oven. Spread marinara sauce evenly over the chicken crust.
  7. Sprinkle with mozzarella cheese and top with your desired vegetables and meats.
  8. Return to the oven and bake for another 5-10 minutes, or until the cheese is melted and bubbly.
  9. Let cool slightly before slicing and serving. Garnish with fresh basil (if desired).
