Ingredients:

  • 1 ½ cups (192g) all-purpose flour, plus more for dusting
  • 3 tablespoons (36g) granulated sugar
  • 1 ½ teaspoons baking powder
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups (360ml) buttermilk, cold
  • 2 large eggs, lightly beaten
  • 3 tablespoons (43g) unsalted butter, melted, plus more for greasing the griddle
  • 1 teaspoon vanilla extract

Instructions:

  1. Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
  2. In a separate bowl, whisk together buttermilk, eggs, melted butter, and vanilla extract.
  3. Gently pour the wet ingredients into the dry ingredients. Stir until just combined. It’s okay if there are a few lumps – don’t overmix!
  4. Heat a lightly greased griddle or frying pan over medium heat. A drop of water should sizzle gently on the surface.
  5. Pour ¼ cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through. Bubbles will form on the surface before flipping. Flip when bubbles start to pop and the edges look set.
  7. Keep cooked pancakes warm in a low oven (around 200°F / 93°C) until ready to serve (optional).
