Ingredients:
- 1 ½ cups (192g) all-purpose flour, plus more for dusting
- 3 tablespoons (36g) granulated sugar
- 1 ½ teaspoons baking powder
- ¾ teaspoon baking soda
- ½ teaspoon salt
- 1 ½ cups (360ml) buttermilk, cold
- 2 large eggs, lightly beaten
- 3 tablespoons (43g) unsalted butter, melted, plus more for greasing the griddle
- 1 teaspoon vanilla extract
Instructions:
- Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
- In a separate bowl, whisk together buttermilk, eggs, melted butter, and vanilla extract.
- Gently pour the wet ingredients into the dry ingredients. Stir until just combined. It’s okay if there are a few lumps – don’t overmix!
- Heat a lightly greased griddle or frying pan over medium heat. A drop of water should sizzle gently on the surface.
- Pour ¼ cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through. Bubbles will form on the surface before flipping. Flip when bubbles start to pop and the edges look set.
- Keep cooked pancakes warm in a low oven (around 200°F / 93°C) until ready to serve (optional).
