  • 1/4 teaspoon Emerald Green Gel Food Colouring (or to desired shade)
  • 1 large Fresh Strawberry (for decoration)
  • 1 teaspoon Red Sugar Sprinkles (optional, for garnish)

Instructions:

  1. Soften Ingredients: Ensure the cream cheese and butter are thoroughly softened (about 30 minutes out of the fridge). This is crucial for a smooth, lump-free dip.
  2. Cream the Fats: In a large mixing bowl, use an electric mixer (medium-high speed) to beat the softened cream cheese and butter together for 2–3 minutes until the mixture is completely smooth and airy. Stop and scrape down the sides halfway through.
  3. Incorporate Sweetener: Gradually add the confectioner's sugar, mixing on low speed until combined, then increase the speed to medium-high and beat for another 2 minutes until light and fluffy.
  4. Add Flavour: Mix in the vanilla extract and fresh lime juice until just combined.
  5. Introduce Colour: Add a small amount (start with 1/8 teaspoon) of the green gel food colouring. Mix thoroughly.
  6. Adjust Shade: Assess the colour. If the dip is not the vibrant green required for a Grinch theme, add more colouring drop by drop until you achieve your desired shade.
  7. Check Consistency: If the mixture seems too stiff, add milk or cream one tablespoon at a time until the dip is smooth and easily spreadable, but still firm enough to hold its shape.
  8. Chill (The Waiting Game): Transfer the mixture to an airtight container and refrigerate for at least 60 minutes. Chilling allows the texture to become stable and scoopable.
  9. Plate the Dip: Once chilled, transfer the dip to your final serving dish. Use a spatula or the back of a spoon to create gentle swirls or a slightly rounded mound.
