Ingredients:
- 16 oz full-fat Cream Cheese, softened
- 1/2 cup (1 stick) Unsalted Butter, softened
- 2 cups Confectioner's Sugar (Icing Sugar)
- 1 teaspoon Vanilla Extract
- 1 tablespoon Fresh Lime Juice
- 1–2 tablespoons Whole Milk or Cream (optional, for texture)
- 1/4 teaspoon Emerald Green Gel Food Colouring (or to desired shade)
- 1 large Fresh Strawberry (for decoration)
- 1 teaspoon Red Sugar Sprinkles (optional, for garnish)
Instructions:
- Soften Ingredients: Ensure the cream cheese and butter are thoroughly softened (about 30 minutes out of the fridge). This is crucial for a smooth, lump-free dip.
- Cream the Fats: In a large mixing bowl, use an electric mixer (medium-high speed) to beat the softened cream cheese and butter together for 2–3 minutes until the mixture is completely smooth and airy. Stop and scrape down the sides halfway through.
- Incorporate Sweetener: Gradually add the confectioner's sugar, mixing on low speed until combined, then increase the speed to medium-high and beat for another 2 minutes until light and fluffy.
- Add Flavour: Mix in the vanilla extract and fresh lime juice until just combined.
- Introduce Colour: Add a small amount (start with 1/8 teaspoon) of the green gel food colouring. Mix thoroughly.
- Adjust Shade: Assess the colour. If the dip is not the vibrant green required for a Grinch theme, add more colouring drop by drop until you achieve your desired shade.
- Check Consistency: If the mixture seems too stiff, add milk or cream one tablespoon at a time until the dip is smooth and easily spreadable, but still firm enough to hold its shape.
- Chill (The Waiting Game): Transfer the mixture to an airtight container and refrigerate for at least 60 minutes. Chilling allows the texture to become stable and scoopable.
- Plate the Dip: Once chilled, transfer the dip to your final serving dish. Use a spatula or the back of a spoon to create gentle swirls or a slightly rounded mound.
- Place the Heart: Wash and hull the large strawberry. Slice the strawberry in half lengthwise, then trim the top slightly to resemble a heart shape. Place the strawberry heart strategically on top of the green dip (representing the Grinch’s growing heart).
- Final Flourish: Dust the strawberry lightly with red sugar sprinkles for extra sparkle. Serve immediately with sweet dippers.
