Ingredients:

  • /4 cup Ancho Chili Powder
  • Tablespoons Pure Dehydrated Lime Juice Powder
  • teaspoon Ground Coriander Seed
  • /2 teaspoon Ground Cumin Seed
  • Tablespoon Fine Sea Salt
  • teaspoon Granulated Sugar (optional)
  • large Ripe Mangoes, peeled and sliced
  • Tablespoon Fresh Lime Juice

Instructions:

  1. Toast whole coriander and cumin seeds (if using whole) in a dry skillet over medium-low heat until fragrant (about 60 seconds). Remove immediately and let cool fully.
  2. Grind the cooled coriander and cumin until very fine.
  3. Combine the chili powder, lime juice powder, ground cumin, ground coriander, sea salt, and sugar (if using) in a spice grinder or blender. Pulse until the mixture is uniformly coloured and well combined.
  4. Taste a small pinch of the finished Tajin Seasoning and adjust salt or lime powder as necessary. Transfer to an airtight container.
  5. Prepare the mango bites: Peel and slice the mangoes into chip-sized wedges.
  6. Place the mango pieces in a mixing bowl, drizzle with the fresh lime juice, and toss gently to coat lightly.
  7. Sprinkle 2 tablespoons of the homemade Tajin generously over the mangoes. Toss again until evenly coated.
  8. Arrange the Chili-Lime Mango Bites immediately on a platter and serve.
