Ingredients:
- /4 cup Ancho Chili Powder
- Tablespoons Pure Dehydrated Lime Juice Powder
- teaspoon Ground Coriander Seed
- /2 teaspoon Ground Cumin Seed
- Tablespoon Fine Sea Salt
- teaspoon Granulated Sugar (optional)
- large Ripe Mangoes, peeled and sliced
- Tablespoon Fresh Lime Juice
Instructions:
- Toast whole coriander and cumin seeds (if using whole) in a dry skillet over medium-low heat until fragrant (about 60 seconds). Remove immediately and let cool fully.
- Grind the cooled coriander and cumin until very fine.
- Combine the chili powder, lime juice powder, ground cumin, ground coriander, sea salt, and sugar (if using) in a spice grinder or blender. Pulse until the mixture is uniformly coloured and well combined.
- Taste a small pinch of the finished Tajin Seasoning and adjust salt or lime powder as necessary. Transfer to an airtight container.
- Prepare the mango bites: Peel and slice the mangoes into chip-sized wedges.
- Place the mango pieces in a mixing bowl, drizzle with the fresh lime juice, and toss gently to coat lightly.
- Sprinkle 2 tablespoons of the homemade Tajin generously over the mangoes. Toss again until evenly coated.
- Arrange the Chili-Lime Mango Bites immediately on a platter and serve.
