Ingredients:

  • 3 very ripe bananas, mashed (about 1 1/2 cups / 340g)
  • 1/3 cup (80ml) vegetable oil (or melted unsalted butter, 60g), plus more for greasing the pan
  • 1 large egg
  • 3/4 cup (150g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup (60ml) milk
  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour (or use baking spray) the loaf pan.
  2. In a large bowl, mash the bananas until smooth.
  3. Add oil (or melted butter), egg, sugar, vanilla extract, and milk to the mashed bananas. Whisk until well combined.
  4. In a separate medium bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).
  5. Gradually add the dry ingredients to the wet ingredients, mixing with a spatula until just combined. Be careful not to overmix – a few streaks of flour are okay.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs attached.
  8. Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
