Ingredients:

  • 4 large eggs
  • 2 tablespoons milk or cream
  • 1 tablespoon unsalted butter
  • Salt and freshly ground black pepper to taste
  • 4 rashers back bacon, cut into pieces
  • 2 pork sausages, casings removed
  • 2 large flour tortillas (approx. 10-12 inch diameter)
  • 1/4 cup baked beans, warmed
  • 2 tablespoons cheddar cheese, shredded
  • Optional: Hot sauce (e.g., Tabasco, Sriracha)

Instructions:

  1. Whisk eggs, milk (or cream), salt, and pepper in a bowl. Melt butter in a non-stick pan over medium heat. Pour in egg mixture and cook, stirring gently, until softly set. Remove from heat.
  2. Crumble sausage into the same pan (no need to wipe it out). Cook, breaking it up with a spoon, until browned and cooked through. Add bacon and cook until crispy. Drain any excess grease.
  3. Heat baked beans in a microwave or small saucepan until warmed through.
  4. Warm tortillas in a toaster or dry skillet until pliable. Spread half of the warmed beans onto each tortilla. Top with half of the scrambled eggs, sausage and bacon mixture, and cheddar cheese. Add a dash of hot sauce, if desired.
  5. Fold in the sides of the tortilla, then tightly roll from the bottom up.
  6. Place assembled wrap in a dry skillet over medium heat. Cook for 1-2 minutes per side, or until golden brown and sealed. Cut in half and serve immediately.
