Ingredients:
- 4 large eggs
- 2 tablespoons milk or cream
- 1 tablespoon unsalted butter
- Salt and freshly ground black pepper to taste
- 4 rashers back bacon, cut into pieces
- 2 pork sausages, casings removed
- 2 large flour tortillas (approx. 10-12 inch diameter)
- 1/4 cup baked beans, warmed
- 2 tablespoons cheddar cheese, shredded
- Optional: Hot sauce (e.g., Tabasco, Sriracha)
Instructions:
- Whisk eggs, milk (or cream), salt, and pepper in a bowl. Melt butter in a non-stick pan over medium heat. Pour in egg mixture and cook, stirring gently, until softly set. Remove from heat.
- Crumble sausage into the same pan (no need to wipe it out). Cook, breaking it up with a spoon, until browned and cooked through. Add bacon and cook until crispy. Drain any excess grease.
- Heat baked beans in a microwave or small saucepan until warmed through.
- Warm tortillas in a toaster or dry skillet until pliable. Spread half of the warmed beans onto each tortilla. Top with half of the scrambled eggs, sausage and bacon mixture, and cheddar cheese. Add a dash of hot sauce, if desired.
- Fold in the sides of the tortilla, then tightly roll from the bottom up.
- Place assembled wrap in a dry skillet over medium heat. Cook for 1-2 minutes per side, or until golden brown and sealed. Cut in half and serve immediately.
