Ingredients:

  • 1 large whole wheat tortilla (approx. 10-12 inches)
  • Optional: 1 tsp Olive Oil
  • 1/4 cup good-quality hummus
  • 1/4 cup chopped cucumber
  • 1/4 cup chopped bell pepper (any colour, adds brightness!)
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup shredded carrots
  • 1/4 cup chopped fresh spinach or rocket (arugula)
  • 1 oz crumbled feta cheese
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon za'atar spice blend
  • Salt and freshly ground black pepper to taste
  • Optional: A squeeze of lemon juice

Instructions:

  1. Chop all vegetables into bite-sized pieces. Combine cucumber, bell pepper, cherry tomatoes, carrots, and spinach in a small bowl.
  2. If desired, brush the tortilla lightly with olive oil and warm it in a dry grill pan or toast for a few seconds per side until pliable.
  3. Spread the hummus evenly over the surface of the tortilla, leaving a small border at the edges.
  4. Sprinkle the chopped veggie mixture over the hummus layer.
  5. Sprinkle with crumbled feta, chopped parsley, and za'atar spice. Season with salt and pepper to taste. Add a squeeze of lemon juice, if desired.
  6. Carefully fold in the sides of the tortilla, then tightly roll it up from the bottom.
  7. Cut the wrap in half (or at an angle, for a fancy presentation). Serve immediately or wrap tightly in cling film (saran wrap) for later.
