Ingredients:
- 1 large whole wheat tortilla (approx. 10-12 inches)
- Optional: 1 tsp Olive Oil
- 1/4 cup good-quality hummus
- 1/4 cup chopped cucumber
- 1/4 cup chopped bell pepper (any colour, adds brightness!)
- 1/4 cup cherry tomatoes, halved
- 1/4 cup shredded carrots
- 1/4 cup chopped fresh spinach or rocket (arugula)
- 1 oz crumbled feta cheese
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon za'atar spice blend
- Salt and freshly ground black pepper to taste
- Optional: A squeeze of lemon juice
Instructions:
- Chop all vegetables into bite-sized pieces. Combine cucumber, bell pepper, cherry tomatoes, carrots, and spinach in a small bowl.
- If desired, brush the tortilla lightly with olive oil and warm it in a dry grill pan or toast for a few seconds per side until pliable.
- Spread the hummus evenly over the surface of the tortilla, leaving a small border at the edges.
- Sprinkle the chopped veggie mixture over the hummus layer.
- Sprinkle with crumbled feta, chopped parsley, and za'atar spice. Season with salt and pepper to taste. Add a squeeze of lemon juice, if desired.
- Carefully fold in the sides of the tortilla, then tightly roll it up from the bottom.
- Cut the wrap in half (or at an angle, for a fancy presentation). Serve immediately or wrap tightly in cling film (saran wrap) for later.
